Jonathan Brown, who trained under Raymond Blanc at the Le Manoir Aux Quatre Saisons, is dramatically raising the standards of hotel and spa dining in his work at Greenwoods Estate. 
He challenges the traditional view of spa food as one of abstinence and self-sacrifice - all lettuce leaves and miniscule portions - with delicious, fresh food created from local ingredients.
