New Spa for Hilton Bentley Miami

Tucked away in the refined “South of Fifth” neighbourhood on the southernmost tip of Miami Beach, the Hilton Bentley Miami / South Beach recently welcomed Gaia Ristorante, a new fine-dining Italian restaurant headed by international chef Gaetano Ascione, along with the Asian-inspired Spa 101. The all-suite, European-influenced hotel is quickly becoming the epitome of an authentic, all-encompassing Miami experience, and these new additions have only further enhanced its caché.  Gaia brings an authentic and refined element to the South Beach dining scene, thanks in part to Chef Gaetano’s unique “walking menu” where he visits each table to discuss guests’ preferences in order to create individually tailored dishes. Based upon guests’ tastes, standout items may include a “cappuccino” amuse - a warm shot of lentil, porcini, and truffle soup; subtly sweet Coffin Bay scallops, served in their shell with a lemon caper butter sauce, topped with micro scallions; prosciutto melon risotto - a spoonful of delicate melon risotto wrapped in a fine slice of prosciutto and drizzled with an aged balsamic glaze; tender short ribs atop a pile of paccheri pasta and tossed in an incredibly fresh tomato and basil sauce. These are just a few of Chef Gaetano’s delicacies. Entrees from the regular menu also shine and include exquisite selections of pasta, fish, shellfish and meat, complemented by mouth-watering starters, sides and desserts.

Located on the fourth floor with ocean views, the intimate Spa 101 has introduced a tranquil element to the Hilton Bentley. Owned and operated by Iris Van de Coevering, whose experience includes studying at The Royal Palace in Thailand and operating a spa in Bali, Spa 101 features a welcoming atmosphere free of pretense and pompous rituals. Spa 101 features high quality organic products and treatments that reflect the heart and soul of Asia.
