Rocco Forte promotes, appoints chefs

Rocco Forte Hotels is promoting Colin Flood to the position of Executive Chef overseeing the food and beverage outlets in Hotel Astoria and its sister property Angleterre Hotel, both of which are located in St Petersburg.  Stefano Balduccio has been appointed to the role of Head Chef at Angleterre Hotel, the position that Colin Flood held until his promotion to a more senior role.

The English-born Flood, who was Head Chef at Angleterre Hotel from May 2003, has a wealth of international experience having worked all over the world, including Saudia Arabia, Grenada and the UK.  It was Flood who was responsible for raising the profile of Angleterre Hotel’s Borsalino Restaurant and turning it into one of the most highly regarded restaurants in St Petersburg. 

As Head Chef at Angleterre Hotel’s Borsalino restaurant, Italian Stefano Balduccio is already starting to make a name for himself in St Petersburg, having introduced a new menu of classic cuisine from his homeland.  Balduccio’s success can be attributed to his belief that authentic Italian dishes should be prepared using only the best quality regional ingredients, according to its traditional origin.

 

Like Flood, Balduccio has worked all over the world, but his formative years were spent learning how to cook the very best Italian cuisine at the three-star Michelin restaurant Alberta in Sicily, Italy.
