Swiss™tel’s Tim Raue is Shooting Star

Tim Raue, Executive Chef of the Restaurant 44 at Swiss™tel Berlin on Kurfuerstendamm, has been nominated as the shooting star of the year in the German edition of the French restaurant guide Gault Millau.  Furthermore, Tim Raue was awarded 17 points (out of 20 possible points) and has now become an affiliate of the team of leading German chefs. Since May 2003, the young Berliner is the Executive Chef of the Restaurant 44 at Swiss™tel Berlin.  Gourmet and cuisine connoisseurs describe him as one of the most experimental, intriguing and creative Executive Chefs of the capital and even Germany. With his philosophy of cuisine “tradition and evolution”, Tim Raue devotes his skills to both regional cuisine (tradition) and the avant-garde cuisine (evolution).


That’s why one finds extravagant dishes on the menu of Restaurant 44, for example: Braised atterox at 69 degrees, simmered for 11 hours served with truffle juice and apple-beetroot salad; grilled spiny-lobster served with apples, peas and green curry sherbet; Feuille of São Thomé chocolate with raspberries and saffron with grapeseedoil and raspberry sorbet.

Despite his young age, the 30-year-old Tim Raue has gained a lot of experience in kitchens of excellent star awarded restaurants.  Tim Raue started his career at the restaurant Quadriga at the Hotel Brandenburger Hof in Berlin.  He then continued to gain more experience at establishments such as the Kaiserstuben at the former Ritz Carlton Schlosshotel Berlin and in the E.T.A. Hoffmann in Kreuzberg.  Tim Raue is also a member of the “Jeunes Restaurateurs d’Europe”, which is an association of young leading chefs.  Within gourmet circles, this association is described as the young stars of the top European gastronomy.

The Restaurant 44 seats up to 100 guests and is open daily between 12:00 - 23:00 hours. A business lunch menu with two light, flavoured rich courses is offered for the price of Euro 13, in addition to the regular menu.  The restaurant’s terrace is open all day in the summer where guests can enjoy a view of the Kurfuerstendamm while having their breakfast, lunch or evening meal as well as ice cream, waffles, cake and coffee specialities.

Three private dining rooms, accommodating up to 60 persons, are available for special occasions whether for personal or business reasons.  Creations by Tim Raue are served on these occasions.
