One-O-One Launches dedicated sustainable fish menu

Celebrated fish restaurant, One-O-One at Sheraton Park Tower, a Luxury Collection hotel in Knightsbridge, has introduced a dedicated menu featuring dishes sourced only from fully sustainable fish stocks. The menu will allow diners to make better informed choices about the fish they eat and give them an opportunity to diversify their fish tastes within species that can be sustainably sourced.

The menu, created by renowned chef Pascal Proyart, features mackerel, sardines, pouting and dab. These are all species from stocks approved by the Marine Conservation Society as being fully sustainable and supplied to One-O-One by fishmongers, James Knight of Mayfair. All four species are sourced by James Knight from the British Isles, with the Sardines and Mackerel from Cornwall, Dab from the North Sea and Pouting from the Eastern Atlantic.

One-O-One’s a la carte menu also features fish that is sustainably and responsibly sourced which has led to the restaurant being recognised as one of the most sustainable fish restaurants in the UK by Fish2Fork - the world’s first website to review restaurants according to whether their seafood is sustainable and not just how it tastes.
