Inn and Spa at Loretto announces arrival of Baleen

The Inn and Spa at Loretto, located in the heart of Santa Fe, announces the arrival of BALEENsantafe.  BALEEN is the highly acclaimed signature restaurant concept by Noble House Hotels and Resorts, owner and operator of Inn and Spa at Loretto. BALEEN (pronounced Bah-leen) with locations in Miami and Naples, Florida and in San Diego, California has been consistently recognized in those markets as one of the best dining experiences.  The BALEEN concept promotes a “whimsical mood” and “serious food,” serving ocean-inspired cuisine using local and regional flavors.

“Santa Fe has long been regarded as one of the best dining destinations in the country, and we’re excited to bring BALEENsantafe to the Inn and Spa at Loretto,” said Marc Pujalet, president and chief marketing officer of Noble House Hotels and Resorts.  “The great local flavors and culture of this area will add a unique element to the BALEEN concept, one which we hope both locals and tourists will call a favorite,” added Pujalet.
At the helm of BALEENsantafe is executive chef David Meador.  With over 14 years of culinary experience, Meador was on the opening team as chef de cuisine at the original BALEEN, located at Grove Isle Resort in Coconut Grove, Florida.  In addition to his experience with Noble House, Meador served as executive chef and as sous chef at The Cheeky Monkey restaurants in Miami Beach and Newport, Rhode Island respectively.  Chef Meador rejoins Noble House after serving as executive catering chef for Gatehouse Catering Company in Providence.

Chef Meador is a Dean’s List graduate of Johnson & Wales University in Providence, RI, where he received his A.A.S. degree in Culinary Arts.
