This April, Rosewood Hotels & Resorts will show appreciation for the Earth’s natural environment by hosting a special dining event in celebration of Earth Day at all 17 iconic hotels and resorts across the collection.  On Friday 22nd April 2011, Rosewood will offer one night of candlelight dining featuring 100% organic, local and sustainable menus.  Rosewood’s Earth Day Dining Event will allow guests to enjoy three-course meals that are entirely organic and prepared with locally sourced ingredients. With every Rosewood property boasting a world-class restaurant, guests will be able to enjoy and experience the fresh taste and health benefits associated with sustainable cuisine, without sacrificing luxury.

To share a taste of what a few of the Rosewood properties will offer for this special dining event:
Rosewood Inn of the Anasazi in Sante Fe will host a dinner by candlelight, featuring a menu prepared with local, organic farmers’ produce including a 9 Spice New Mexican Beef Tenderloin, served with poblano potato gnocchi, young spinach, spring morels
coffee pinon glaze at the Anasazi Restaurant.

Rosewood Mansion on Turtle Creek in Dallas will be featuring a five-course Earth Day Tasting Menu served by candlelight on the restaurant patio.  Additionally, an organic wine list will compliment the special menu.

Rosewood Little Dix Bay in the BVI will be serving dinner on the beach by candlelight featuring both a regular and a vegetarian menu.
Rosewood San Miguel de Allende inMexico, the newest property added to the collection in February 2011, will be serving dinner by candlelight and featuring farm raised chicken marinated in rosemary with tomato, asparagus and gran nappadano cheese “Essenza” organic risotto
Hotel Al Khozama, A Rosewood Hotel in Saudi Arabia will be featuring a entree of line-caught Nagil with potato rosti, crabmeat and leek fricassee, green lipped mussel gratin and welsh leek fumet.

Furthermore, each property will blend unique elements into the event beyond the featured menus.  For example, Rosewood Mayakobá in Mexico will display a photo exhibition of the Mangroves and local landscape art; Rosewood Crescent Hotel in Dallas will host a representative from the Paul Dolan winery who will discuss the sustainability and biodynamic properties of their wines; and guests of Rosewood Inn of the Anasazi in Sante Fe will enjoy live acoustic guitar entertainment.
