Andrew Cooper has been appointed Executive Chef at Four Seasons Resort Rancho Encantado Santa Fe, joining the team from the Resort’s sister property, Four Seasons Resort Hualalai at Historic Ka’upulehu. “This is my first time living in the Southwest, and I couldn’t be more excited about the prospect of learning new techniques incorporating New Mexican influences and flavours,” says Cooper. “I already am researching local game, farmer’s markets and growers, and seasonal offerings unique to the destination. The rich culture and history of Santa Fe promise many exciting adventures – culinary and otherwise – for me in this new role.”
With more than 20 years of experience around the globe, Cooper’s diverse resume includes a wealth of culinary expertise in a variety of cuisine styles. A graduate of the esteemed Culinary Institute of America, Cooper brings more than 12 years of Four Seasons experience to his new role as Executive Chef at Four Seasons Resort Rancho Encantado.
Cooper’s most recent appointment was Executive Sous-Chef at the Hualalai property. Prior to that, he was the opening Senior Sous-Chef at Four Seasons Hotel Westlake Village, in Southern California. He also served as Sous-Chef at Four Seasons Hotel New York.
Cooper’s early years as a chef were marked by variety. He started at the Woodcrest Country Club in Syosset, New York, then went on to become a guest lecturer for a period of time at the Alpina International School of Hotel Management in Illana, Switzerland. His next role was cooking at Chef Allan’s in Miami, Florida, and then training as executive chef at Bretts Wharf Restaurant in Brisbane, Australia.
In addition to a culinary degree from the CIA, Cooper earned a bachelor’s degree in hospitality management and a master’s degree in food service management, both at Florida International University.
Cooper enjoys arts, culture and history, and visiting museums and galleries. An avid outdoor enthusiast and cyclist, he is eager to explore the majesty of New Mexico and Santa Fe. Cooper will reside in Santa Fe with his wife, Ruby, and two young children.
