Ladera bring back "Island Cuisine Experience Package" April 14 - 18 & October 13 - 17,

In response to a successful debut last year, Ladera Resort is bringing back the popular five-day/four-night “Island Cuisine Experience” package. Guests will once again have the opportunity to learn about Caribbean cooking firsthand from Orlando Satchell, Executive Chef of the resort’s internationally acclaimed Dasheene restaurant, during five days of interactive cooking demonstrations, culinary & wine tutorials and excursions to the island’s colorful markets and private purveyors. Classes will be small and personalised, with plenty of time to relax and enjoy the resort.

Dasheene, Ladera’ restaurant, is known throughout the Caribbean for its innovative kitchen and creative renderings of island cuisine.ÊUnlike many island resort restaurants, Dasheene’s menu is based on 100% native ingredients and relies on the local bounty for its fresh, innovative take on West Indian cuisine.ÊÊThe produce is grown exclusively for the resort by island farmers and neighboring plantations. Fish is caught daily in the nearby waters and the spices are harvested from indigenous St. Lucian plants.ÊChef Satchell has been at the forefront of St. Lucia’s “sustainable cooking” movement to encourage other local chefs to use their native produce and products and to claim Caribbean cooking’s rightful place in World Cuisine.Ladera Resort is located in the Windward Islands of the Caribbean. It is uniquely situated in the mountains overlooking the port town of Soufrière.Ê The resort is known for its distinctive eco-lodge architecture, modeled on luxury tree-house living. Guestrooms were intentionally built without a fourth wall, yet were designed to be both sheltered and completely private, while providing spectacular views of the volcanic Piton Mountains.Chef Satchell made his debut on the New York culinary stage at the James Beard House in 2003 and has rightly earned a reputation around the globe for his innovative style and award-winning Caribbean cooking.ÊHe has brought the taste of the Caribbean to restaurants in places as far flung as Florida and Singapore.ÊWhen he is not at Ladera Resort, Chef Satchell manages Nouvelle Caribbean, a catering concept based in London. Born to Jamaican parents in Birmingham, England, Chef Satchell has brought Caribbean cuisine into many top London hotels, including the Park Lane, the London Hilton and the Landmark Hotel.ÊIn 1998, he was the first Caribbean chef invited to cook at the Cordon Bleu School in London.ÊLast February, Chef Satchell became the first St. Lucian chef to cook at the prestigious James Beard House in New York City. Most recently, he was named the 2003 recipient of the Best Caribbean Chef Award, presented by the Caribbean Food Emporium and Caribbean Cuisine Consortium based in the U.K.
